Raspberry Lychee Syrup Recipe
- 6oz container fresh raspberries
- 12 lychees (fresh or canned, peeled and pitted)
- 1/4 cup sugar
- 1 tsp lemon juice
Instructions:
- 1.Add raspberries to a bowl with sugar and lemon juice. Let sit for at least 10 minutes (the longer, the better) to release natural juices.
- Peel and pit lychees. If using canned lychees, drain them first. To avoid leftovers, you can increase the raspberries to match the lychee amount.
- Add everything to a saucepan with 1/4 cup water over low-medium heat. Stir occasionally, pressing the fruit with the back of a spoon to release juices, and cook for 10-15 minutes until sugars dissolve and fruit breaks down. Add more water if needed to prevent thickening.
- Let cool before using.
How to Serve:
- Mocktail: Add 1 oz of syrup (or more to taste) to your favorite sparkling water over ice.
- Cocktail: Shake 1 oz gin, 1/2 oz elderflower liqueur, and 1 1/2 oz raspberry lychee syrup with ice. Strain into a glass and top with sparkling water.
